This is the world-famous Italian dish. Boiled pasta is put in a heated pan where the diced pork jowl (guanchiale) or bacon is already frying and pour egg sauce.

Spaghetti SchedroTM 400 g
Garlic 1 clove
Extra virgin olive oil 60 ml
Smoked bacon or pork jowl 200 g

Eggs Four
Parmesan cheese 100 g
Salt to taste
Ground black pepper to taste

Step 1

Smash garlic with the flat side of the knife and fry in olive oil. Then remove the garlic (we won`t need it anymore) and continue frying the finely chopped bacon until it turns a pleasant golden brown.

Cook spaghetti SchedroTM in salted water al dente (cooking time is specified on the package).

Prepare egg sauce. Whip eggs (only yolks recommended) with a wire whisk until smooth, then mix with grated parmesan and black pepper.

Put spaghetti in a pan with fried bacon and pour egg sauce. Mix eggs thoroughly and quickly to prevent clumping. You may add a bit of spaghetti cooking water if the sauce seems too thick.

Best served on a hot plate. Sprinkle grated parmesan (if desired) and cracked black pepper to taste. Dish up immediately.
