Penne alla Vodka

This dish is delicious and easy to cook. Traditionally, cream and tomatoes are not combined in the Italian cuisine since tomato acid tends to ‘clump’ the cream. That is why we need such an original ingredient like vodka. Evaporated alcohol makes the taste of pasta amazing.

Ingredients

Extra virgin olive oil
50 ml
Garlic
4 cloves
Chili pepper (cracked or fresh)

Cream
150 ml
Salt
to taste
Ground black pepper

Parsley

Step 1

Add finely chopped garlic and chili to a saucepan pan with olive oil. Stew uncovered over low heat. In about 3 minutes, remove the garlic from a saucepan.

Step 2

Add chopped tomatoes, mash with a wooden spatula until smooth and stew for 5 minutes.
Add vodka, continue to simmer on moderate heat for a few more minutes, until the sharp smell of alcohol disappears.

Step 3

Add cream and stew for a few minutes, stirring at a steady pace. Season with a pinch of black pepper and salt (to taste). Add grated parmesan and mix.

Step 4

Cook penne SchedroTM in salted water al dente (cooking time is specified on the package).
