RIGATONI WITH BACON AND CHEESE CREAM

Rigatoni is a type of Italian pasta that is perfectly combined with many sauces, meat, vegetable, fish, and seafood dishes. We suggest you try rigatoni with bacon.

Ingredients
rigatoni pasta
400 g
bacon (guanciale)
200 g
pecorino cheese
200 g
salt and pepper
to taste
Step 1

Boil the pasta without cooking for 4 minutes before the prescribed time, according to the instructions on the package. Do not pour out the water.

Step 2

Cut the bacon into cubes and fry until the fat is translucent. Add a ladle of water in which the pasta was cooked. The bacon should not be too crispy.
Grate the cheese in a bowl, add a ladle of salted water in which the pasta was cooked, mix until the consistency of cream.
Put the pasta in a frying pan with the bacon, add water, reduce the heat, and simmer for 2 minutes.

Step 3

Pour the curd cream into the pasta and mix well.

Step 4

Put the pasta with bacon on plates, sprinkle with pecorino cheese and pepper.
