Pasta alla Norma (Penne alla Norma) this ‘musical’ recipe containing the whole palette of Mediterranean flavors, is a culinary classic of Sicily. It was named as a tribute to the opera by Vincenzo Bellini ‘Norma’ The main ingredients of Penne alla Norma are eggplants, tomato sauce and ricotta.

Ingredients
Penne SchedroTM
400 g
Eggplant
250 g (1 pcs.)
Flour
2 tablespoons
Extra virgin olive oil
50 g
Onion
50 g
Garlic
1 clove

Tomato pulp
200 g
Basil
for decoration
Pickled cheese ricotta
80 ml
Salt
to taste
Ground black pepper
to taste

Step 1

Dice eggplants and add a little salt. Leave for 15-20 minutes to draw out bitter juice.

Dredge eggplant and fry in a half of olive oil.

Heat a pan, add the remaining oil. Chop the onion and garlic, fry until change the color. Add eggplant, tomato pulp, pepper and cook for about 15 minutes.

Cook penne SchedroTM in salted water al dente (cooking time is specified on the package).

Combine boiled penne and the sauce in a pan, stir. Best served on a hot plate. Decorate the dish with fresh basil leaves and grated cheese, best served hot.
