Autumn recipe ‘Penne with lambs and zucchini’
Ingredients
Penne SchedroTM400 g
Lamb meat300 g
Zucchini200 g
Extra virgin olive oil3 tablespoons
Celery20 g
Broth1 saucepan
Salt and pepperto taste
Rosemary1 веточка

Shallot30 g
Garlic1 clove
Thyme2 sprigs
Pecorino/Parmesan cheeseto taste
How to cook

Dice the meat and fry in a pan adding a bit of oil.

Chop the celery, shallot and sauté, preferably in a stoneware pan adding a bit of oil.

Add meat, without frying oil, let soak the sauce, then add wine. Wait until the meat is ¾ smaller.

Add thyme, rosemary, diced potato and broth. Cook covered over low heat for about an hour. Season with salt, sprinkle pepper and keep over low heat.

Wash courgette /zucchini, cut them into short strips, sauté for 2-3 minutes in a pan with garlic and oil.

Cook pasta al dente in a small amount of salted water, drain water, leaving a bit of liquid, and put it in a pan with a lamb sauce, then add courgette/zucchini and serve up. Sprinkle Pecorino/Parmesan cheese and olive oil.
